Make Your Own Pasta

Making pasta is very simple, it doesn't cost much and the taste of your own freshly made pasta is awesome!!!

Homemade Pasta, Basil & Grated Cheese

Preparation: 15min

Resting time: 35min

Cooking: 3-5min

Serves: 3 good eaters

 

You should have...

  • 300 g flour (we used all-purpose flour but you can use "00", which is usually the one recommended for pasta)

  • 3 eggs

  • Salt & Pepper (to taste)

  • Nutmeg (just a tiny bit, this is super strong!)

  • 2 tbsp of Olive oil

  • 2 tbsp of vinegar (cider)

if you want to change the recipe count 100g of flour and 1 egg per person

 

You should...

Mix it

In a large mixing bowl

Flour + egg + salt + pepper + Nutmeg

Add the Olive Oil & Vinegar

 

Knead it

Cover your table top with some flour

You need to knead for about 10 minutes, the dough needs to be homogenous.

Tips:

"If you dough is too dry and difficult to knead, put a bit of water on your hands and try again.

If it is still really crumbly, you can add a bit of Olive Oil as well"

 

Rest

For both the pasta & the chef

Make a ball of dough, place it in the bowl & cover with a cloth.

Leave it to rest for 35 min

 

Cut it!

No need for a fancy machine, a knife and a rolling pin will do the job...

Depending on the size of your kitchen worktop, I would cut the ball of dough into 2 or 4 pieces.

With your rolling pin make it as flat as you possibly can, the pasta sheet has to be almost transparent!

Then, cut it as you wish! We wanted to eat tagliatelle-style, so we cut them into long and narrow strips.

Cook it!

Just like any other pasta, bring you water to the boil, add a pinch of salt and throw them in!

We had cooked a homemade tomato sauce to go with that (I'll post the recipe soon) and added a drizzle of the stunning Castillo de Canena First Early Royal olive oil, a fantastic meal...
